I read your questions on mothering.com about the chocolate blues bonnet! I am the author and so I can answer your questions.
You are correct that there is a math problem for the largest size in this pattern. Sorry about that and I will have that corrected on the next printing. I would bind off 27 stitches, knit 21, bind off 27 stitches. 27+21+27=75! Reattach the yarn to the 21 stitches that remain on your needle by starting to knit those stitches in the stripe pattern that is established. The rest of the pattern should be ok.
